This strawberry rickey is fruity and cool; a refreshingly simple nonalcoholic drink for hot summer nights. It’s full of fresh and delicious strawberries and a slice of lemon!
I love a good frothy coffee shop drink or fancy cocktails and even thick, tall milkshakes. They are true treats, but I only indulge in them on special occasions. I have this weird rule for myself. I only indulge in sweets once a day. This started in my early twenties. I had gained quite a bit of weight and was feeling very bad about myself. In an effort to deal with my weight and general well being, I set up rules for myself.
Changing My Lifestyle
I started an exercise program for one thing. But I also changed my diet. I started cooking my meals instead of doing take out. I stopped snacking on bad food and added more fruits and vegetables. My weakness has always been sweets. Instead of taking them out completely, I allowed myself an indulgent treat once a day. It didn’t matter what time of day, as long as it was only once a day.
Here I am years later and all my rules have become my lifestyle. This is why when I am offered up a fancy coffee or cocktail I often pause to think, will there be cake in my future? I know it might be weird, but it’s me. Nine times out of ten, if I had to choose between a richly flavored beverage or a slice of cake, I’m going to go with the cake.
How to Make a Strawberry Rickey
This easy strawberry rickey is the best way I’ve found to bend my own rules. For starters, it’s made with lots of fresh strawberries. Also, I took out the gin that is found in a traditional rickey and made this a non-alcoholic beverage that even kids would enjoy! Finally instead of sugar, I used SPLENDA® Sugar Blend. I enjoy SPLENDA®’s Sugar Blends, they are so versatile and can be used in baked good like these cookies, or in cooking like these stuffed jalapeños. And finally, it’s just perfect for beverages like this strawberry rickey. The taste is great too; sweetness without all the calories!

- 2 cups ice cubes
- 1 1/2 cups sparkling lemon water
- 1/4 cup SPLENDA® Sugar Blend
- 1 lemon, juiced
- 1 lb fresh strawberries
- In a blender, combine all 5 ingredients. Blend until smooth. Serve with lemon wedges if desired.
