This bubbly creation is a little sweet and a little creamy; it’s sparkly yet sophisticated!
My friends used to give me a hard time because I knew nothing about wine. They were (are) quite the wine drinkers and could discuss brands, varieties, flavors, tannins, etc. I would sip on my craft beer and watch and listen.
A few years ago I attended a wine/food pairing class and tried very hard to take notes and pay attention so that I could start participating in the wine talk with my friends. By the end of the evening, I tasted so many varieties of wine that I was thoroughly confused. Despite my notes, I couldn’t remember a thing about any wine I tasted. I couldn’t remember which flavor profile matched what variety or what food paired best with what wine. The evening was fun but not as educational as I had hoped.
I am still no sommelier, but I have to come to learn a bit more about wine. To be specific, I know what I like and I know what I don’t. That is all the information I need. I love pinot grigio, prosecco, certain red blends and I absolutely LOVE rose wines.
Rose wines have grown in popularity and you can find many varieties with flavor profiles to fit your every whim. Rose wine pair perfectly with seafood like this Easy Grilled Salmon Recipe or this Pesto Pasta. Rose wines can be slightly sweet or light and dry. They are refreshing as well.
This Rose Sparkling Wine….
This float is quite the treat. I filled each glass with creamy vanilla ice cream, then muddled fresh raspberries with a little sugar, and placed them over the ice cream. Finally, I poured my favorite rose sparkling wine over top. The pink bubbles are magnificent and the flavor is cool, fruity and effervescent! You could use either sweet or dry sparkling wine for this recipe and almost any berry will do!
It doesn’t matter whether you call this a dessert or a cocktail as long as you call it delicious!

This rose sparkling wine float is a cocktail and dessert all in one! This bubbly creation is a little sweet and a little creamy; it's sparkly yet sophisticated!
Ingredients
- 1 cup raspberries
- 1 tablespoon sugar
- Vanilla ice cream
- rose sparkling wine
Instructions
Muddle raspberries and sugar together until berries are smashed.
Fill each glass with scoops of ice cream and divide berry mixture over ice cream. Top each glass with sparkling wine.
