This Refresher Mocktail Is A Hit
My 14-year-old daughter has an infinite amount of patience when it comes to preparing food. No dish is too complicated or too time-consuming for that girl, she will take as much time as necessary to satisfy her cravings.
My daughter could spend all Sunday morning working on a batch of crepes (and only eat one). She will make delicately and slowly cut matchstick carrots and cucumbers to make spring rolls or sushi rolls for herself for lunch, or she’ll even whip up a batch of churros, just because. Her specialty, however, is acai bowls.
My daughter will cut up several different kinds of fruits into tiny, bite-sized pieces. She will carefully arrange the fruits on her bowl along with coconut, chopped nuts and whatever else she can find. I watch in awe of her patience, her meticulousness, and her diligence. I also watch with a bit of jealousy because I possess none of those traits.
I can make all the above recipes, I just don’t have the patience or the time. Instead of crepes, I make pancakes, instead of sushi, I make sushi bowls and instead of acai bowls I make an acai refresher instead!
About This Refresher Drink
This is such a unique, yet utterly refreshing drink, you will find yourself craving it all the time! This drink is made with frozen (and thawed) acai, beet juice, lime juice, a splash of lemon, ginger and Pompeian’s Organic Apple Cider Vinegar. I know, I know, an unusual mix of ingredients but they marry together in perfect harmony. In each sip, you can somehow taste individual ingredient all while enjoying the drink as a whole. For a mocktail effect, top your refresher off with a little club soda or seltzer.
I’ve used apple cider vinegar before in this Vanilla Pear Fruit Shrub Recipe and it was just as delicious. Apple Cider Vinegar has a slew of health benefits including possible weight loss, lowering blood sugar, lowering cholesterol, and may protect against types of cancer.
Apple cider vinegar is proving to be a staple in more than just dressings and sauces, it is now a staple in some of my favorite drinks too!
- ⅜ cup Acai juice (I used a frozen pouch, thawed)
- ⅓ cup beet juice
- ¼ cup Pompeian’s Organic Apple Cider Vinegar
- The juice from half a lemon
- ⅓ cup orange juice
- 1 teaspoon jarred ginger
Combine all the ingredients in a blender and combine until smooth. Pour over ice and serve.
