Thai Iced Coffee with a frappe twist! This cold beverage is just what you need when that afternoon slump sneaks up on you!
My good friend gets up every morning at 5:30 to go workout. I too get up at 5:30 am. But not by choice. Around 5:20 am I start to feel my geriatric dog staring up at me in the hopes that her piercing stares will convince me to get up and feed her. Which of course I do.
I don’t have a problem with the waking up at 5:30, it’s the getting dressed part that kills me. I want to lounge in my pj’s for as long as I possibly can. I have to ease into my day; skipping off to the gym is not a leisurely start to my day.
It’s not just the pj’s, however. It’s also the coffee. I need a substantial amount of caffeine in the morning. Normally I gravitate towards espressos or lattes. But perhaps if I were able to consume even one these Thai Iced Coffee Frappes first thing then morning, then I’d be motivated enough to get dressed and pump some iron. Maybe a Thai iced coffee could help me serve up my best; then I too could be a winner.
This coffee is one of my favorite treats. It starts with strong brewed coffee that I chill in the fridge. I place the coffee in a blender and then I add the “Thai” element, which includes dried cardamom, cinnamon, almond extract, and coconut sugar. I add a few cups of ice cubes and blend it all up. I then pour in Unsweetened Vanilla Almond Breeze Almond milk to the coffee. This makes my iced coffee creamy and delicious. I like to add a dollop of whipped cream and a sprinkling of freshly ground cinnamon. This turns my Thai iced coffee into a liquid dessert!
Ok, I take it back, maybe I will change up my morning routine. I’m going to drink TWO iced coffees and then hang out in my pajamas!

- 1/2 teaspoon almond extract
