This lassi recipe gets made with fresh, ripe peaches instead of classic mangos. This low fat beverage is an excellent source of protein and is sweet and delicious.
I’m not an Indian food connoisseur. I know that I like chicken curry with cashews and curry noodle bowls, but beyond that, my knowledge of Indian cuisine begins to wane. I should also add, that I am pretty keen on sucking down a mango lassi or two.
If you are not familiar with what a lassi is, I’ll explain them to you. A lassi recipe is a blend of water and yogurt with spices and fruit (typically mangos) added in. Lassi’s are somewhere between a milkshake and a smoothie.
Since peaches are plentiful this time of year, this lassi recipe uses fresh, ripe peaches in place of mangos. These fresh peaches are added to a blender along with plain, low-fat Greek yogurt, Almond Breeze Almond Milk and a little sugar. I added enough sugar to suit my tastes, but you’ll want to adjust the sugar you add to suit your own, individual tastes. Alternatively, agave nectar or honey may be used in place of the sugar. Crushed ice is blended along with the ingredients for a thick, cold beverage that tastes so good this time of year and the bonus is it’s good for you! The yogurt gives this lassi recipe a fair amount of protein and keeps it low in fat while the peaches add a variety of vitamins.

- 1 cup chopped peaches
- 2-3 tablespoons sugar
- 1 cup plain Greek yogurt
- 1 cup Almond Breeze Almond Milk
- 1/2 teaspoon vanilla
- 1 cup of ice
- 1/4 cup almonds, coarsely chopped (optional)
- Combine all the ingredients in a blender and process until smooth. Top with chopped almonds if desired.
