I remember when the term “umami” came into the foodie dictionary. I wasn’t a foodie at that time; I’m not even sure I had a family to cook for back then. I never really paid much attention to the word. I always thought it had something to do with taste buds. I assumed it meant that food had umami when all the tastes buds were pleased; meaning the food had a little sweet, a little heat and a little saltiness. Or maybe I thought the word meant that food satisfied all your senses?
I finally looked up the meaning, and I mostly had it all wrong. Umami is a Japanese word that can be translated to mean “pleasant savory taste.” I am disappointed by that meaning. I think that most food I love would fall under that definition. I prefer my definition; that food with umami satisfies your salty/sweet taste buds. Food like Samoa popcorn or Nutella Caramel Pretzel Fudge has the perfect ratio between salt and sweet flavors. They make my mouth terrifically happy.
These chocolate covered pretzels have everything I want in a snack. They are light and crisp and topped with all sorts of goodness. Heart-healthy dark chocolate adds a silky sweetness along with a handful of chopped dried mangos. I sprinkled toasted coconut for a rich, caramel-like flavor and finished them off with chopped Whole Natural Blue Diamond Almonds.

- 1 7.2 oz package thin pretzel crackers
- 8 oz dark chocolate
- 1/3 cup chopped toasted coconut
- 1/3 cup chopped dried mangos
- 1/3 cup chopped Whole Natural Blue Diamond Almonds
- Arrange pretzels in an even layer on a baking sheet lined with parchment or wax paper.
- Melt chocolate in a microwave safe bowl, stirring until smooth.
- Drizzle chocolate over pretzels. Immediately sprinkle coconut, mangos, and almonds. Allow chocolate to set completely.
- Store pretzels in layers separated by wax paper in an air-tight container.
