Chocolate Cupcakes with Strawberry Chip Buttercream

This chocolate cupcakes idea came to me at the strangest time, about 4:00 a.m.  Let me explain.  I a few nights ago, I went to bed anticipating a glorious nights sleep.  You know the kind where you wake up in the exact same position if you fell asleep in??  About 3:00 a.m, nature called.  I took care of business and went back to bed.  But I was too hot, so reluctantly I peeled back a layer of bedding ( I like to be snug).  Then I noticed the sound coming from my husband.  It wasn’t a snore, but equally disturbing.  It was that sound of a bit of phlegm rattling in the back of the throat each time he took a breath through his mouth.  Since he wasn’t really snoring I figured I could just ignore it.  As soon as you tell yourself that you know you are doomed.  It’s all you can focus on and suddenly the sound fills the room!  So I gave him a loving nudge, he rolled over and all was right in the world.  But not really.  My eyes popped open with the realization that now I can’t sleep!!!!  I actually asked myself if 3:30 is too early to just get up.  Um, yes crazy lady it is.   Since the noise was no longer present, I started to focus on the things that were bothering me all day and then stew about them.  Once I had enough of that, I ran through my grocery list, my to do list, my menu for the next week, the list of things I could do with my life….you get the idea.  Then the idea hit me for these fabulous chocolate cupcakes! Now I couldn’t sleep because I was so excited!  I could practically smell and taste them.  It was between virtual bites that I finally fell asleep.  When I woke, I was very tired and relied heavily on caffeine.  But I was also happy to have had my eureka moment.  These cupcakes really were amazing!

A moist chocolate cupcake topped with sweet strawberry buttercream studded with chocolate chips.
Recipe type: Dessert

  • For the cupcakes:
  • 1 (18.25 ounce) package devil’s food cake mix
  • 1 (5.9 ounce) package instant chocolate pudding mix
  • 1 cup sour cream
  • 1 cup vegetable oil
  • 4 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon strawberry extract
  • ½ cup warm water
  • For the buttercream:
  • 1 cup softened butter
  • 1 cup shortening
  • 8 cups powdered sugar
  • 1 tsp salt
  • 1 teaspoon vanilla
  • ⅓ cup juice from frozen strawberry's (thawed)
  • ⅓ cup water
  • 1 cup mini chocolate chips
  • pink decorator gel
  1. Preheat oven to 350. Line cupcake tin with liners, set aside. In a large bowl combine cake mix, pudding mix, sour cream, oil, beaten eggs, vanilla, extracts and water. Beat on low until well blended. Turn mixer on medium and continue to beat for two minutes. Using a large cookie scoop, scoop better into each cupcake well until about ⅔ full. Bake for 18-20 minutes. Let cool completely before frosting.
  2. For the buttercream, in a stand mixer, cream together shortening and butter until very smooth. Slowly add in powdered sugar one cup at a time, beating well after each addition. Batter will be stiff. Add in salt and vanilla. Finally add in strawberry juice and water one table-spoon at a time until you reach the desired constancy for spreading or piping frosting. You may find you'll need more or less liquid. Add a tiny amount of gel coloring until you reach the shade of pink you like.  Finally, fold in chocolate chips. Spoon frosting into piping bag fitted with the largest tip possible so your chips to clog the opening. Pipe on a generous amount of frosting

  2. Eureka! These do look yummy! I woke up this morning at 4:30 from a whining baby and figured I could just stay up and get some stuff done…I am so. tired. now. ugh!!
