Toffee bits make them extra sweet, and almond meal keeps them moist!
We have come to the end of spring break. If you asked my kids what they loved most about the week, I am fairly certain they would say they loved going downtown to watch baseball’s opening day parade. It was cold, but filled with the anticipation of a winning season. I think they’d admit they enjoyed their time taking in the masterpieces at the art museum, expanding their minds and becoming more “cultured”. Finally, I’m quite confident the best part about their break was the quality time spent with close friends.
If you were to ask me what I liked about their spring break, I would say, I enjoyed a week of adventurous activities with the kids and a relaxed schedule. I loved not packing lunches or coercing kids out of bed. But what I liked most about spring break is the fact that I only spent a whopping $14 on the weeks entertainment! Yes, my friends, I am CHEAP!!! While going to the aquarium or children’s museum WOULD be fun, I just have a hard time parting with $80 just for an hours worth of entertainment! The way I look at it, the fish at the aquarium haven’t really changed since the last time we were there. And I can say with confidence that the children’s museum hasn’t updated their exhibits since the last school field trip. So really, we didn’t miss a thing. What’s more exciting than watching retired baseball players roll by in giant Cadillacs in 40 degree weather? How fantastic is it that we spent an entire afternoon roaming one of Cincinnati’s oldest parks that surrounds the art museum. We exercised our bodies with each stride and our minds while exploring art and architecture. How fortunate are we that we got to spend an entire week with wonderful friends?! Proof that you don’t actually have to spend a dime to enjoy the finer things in life.
Naturally I couldn’t let break go by without taking the time to bake! My kids love to make chocolate chip scones the best! And they enjoy playing with piping bags when I make cupcakes. But no one can resist cookies!!! Especially these! I always have several Hershey Bars handy for impromptu s’mores! So I chopped those to use in place of milk chocolate morsels. And I love the addition of toffee bits to almost any baked good! The biggest change I made to these cookies, is adding Trader Joe’s almond meal in place of half of the flour. I’ve never tried it before, but I am truly a believer!!! These cookies baked thinner like some bakery cookies. They were crispy on the edges, but stayed moist in the middle! We were blown away! We have found our new favorite cookie! I can only imagine what we will bake over our next school break!
