Peppermint Hot Chocolate Is The Best

Peppermint hot chocolate was one of my favorite coffee shop drinks back in college.  The peppermint came in the form of schnapps, which helped keep me extra toasty and cozy.   I loved those coffee shops.  My friends and I would sit there for hours.  This was back before anyone had a lot of electronics, so instead of “plugging in”, we just talked.

I fear my kids will never have that same coffee shop experience.  Today, kids walk into a Starbucks (easy to do since one is located on every block), order their peppermint hot chocolate and walk out; phone in hand of course.   Intimacy and honest, face to face conversation has been replaced by snaps, artsy photos and texts.  Don’t get me wrong, I love texting and taking photos too, but that is because I have been lucky enough to have had those long evenings at the coffee shop.

How To Make Peppermint Hot Chocolate Bark

Chocolate barks are one of the easiest treats to make.  They are no bake and can be made topped with almost anything.  This Butterfinger Bark is a family favorite and when the holidays roll around, I have to make this Samoa Cookie Bark!  For this recipe, I used Ghirardelli Chocolate Wafers, I think they melt perfectly smooth and they taste great.  I whisk in hot chocolate mix into the chocolate then pour it out onto a cookie tray lined with parchment paper.  Freeze the chocolate until set.  You will also use white chocolate wafers; but these you melt and mix with marshmallow fluff then spread this mixture over your chocolate layer. Another layer of dark chocolate will go on as the third layer, chop Peppermint Kisses and sprinkle on top!

I found that this bark was best if stored in the fridge.  If this bark is left out too long, the fluff will ooze a little.  That change in texture will not change the flavor, but it may not be as “neat” as you like.   This is a very easy recipe, it serves many and can be a great gift too!

Cook Time: 20 minutes
Are you a fan of peppermint hot chocolate? Then this easy holiday treat is your kind of dessert! Peppermint, hot chocolate, and marshmallows are all present in this fun no-bake treat!

Ingredients

  • 3 10 oz packages Ghirardelli wafers
  • 1 packet hot cocoa
  • 1 10 oz package white wafers
  • 1 7 oz container marshmallow fluff
  • 2 teaspoons mint extract
  • 1 cup chopped peppermint kisses

Instructions

Line a baking sheet with parchment paper.

In a microwave safe bowl, microwave 1 1/2 packages of the chocolate wafers until smooth. Whisk in the hot cocoa packet and pour the chocolate onto the prepared sheet. Place the chocolate in the freeze for 10 minutes.

In another microwave safe bowl, melt the white chocolate until smooth. Stir in the marshmallow fluff and the peppermint extract. Spread the white chocolate layer over the chocolate layer and place back in the freezer for 10 minutes. Microwave the remaining chocolate and cover the white chocolate layer. Gently place the chopped kisses over the top and freeze until set.

    I made this for Xmas with my extended family – it was a hit!! Thanks for the great recipe! The texture of the white chocolate / marshmallow combo made me a bit nervous – but the end result was fantastic!
