Summer break means that my home will be a revolving door. Kids will come and go non stop and the dog will go out just so she can turn around and come back in. I’ll lose track of whose coming and whose going and I’ll probably lose my kids to the house the has the best toys. That’s what summer break is all about.
I cannot compete with cool toys, but I can compete with good food! My kids eat all day in the summertime. They eat because they are bored, they eat because they have been swimming all day, they because their friends want to eat. And that is all fine with me. I like to stock up on fresh fruit and veggies so that anytime anyone needs a snack, a healthy one is on hand.
Fruit dips are a fun and easy snack or dessert. They are perfect for all the ripe, seasonal produce. This easy fruit dip recipe combines some of my favorite flavors and favorite ingredients. I start with homemade lemon curd. I always have lemon curd on hand. It is incredibly simple to prepare. It is a dessert all on it’s own, but it is also wonderful as a hand pie filling or even in dessert sandwiches. You could buy the lemon curd if it makes your life simpler. I added honey flavored Yulu Yogurt, fresh lemon zest, and a drizzle of honey. You could also stir in whipped topping if you wanted a fluffier, dessert-like dip. This fruit dip recipe is fit for any farmer’s market fruit you can throw at it. It’s also the perfect way to keep hungry kids happy!
Lemon Honey Fruit Dip Recipe
Honey flavored yogurt is swirled with lemon curd and whipped cream for a creamy tart treat!
For the lemon curd
- 1/2 cup sugar
- 2 whole eggs
- 1 lemon, zested
- 1/2 cup lemon juice
- 1/4 cup butter, melted
- 2 5.3 oz containers honey flavored Yulu Yogurt
- 1/2 teaspoon honey for garnish, optional
- Additional lemon zest, optional
- To prepare the lemon curd: combine whisk together sugar and eggs until smooth. Stir in lemon zest and juice. Slowly whisk in melted butter. Place bowl in the microwave. Heat for 1 minutes; stir. Continue heating the lemon mixture in 1 minute intervals until mixture is thick and coats the back of a spoon. Place in the refrigerator until completely cool. When ready, blend in yogurt. Top with lemon zest and honey if desired.
