Ranch spiced Buffalo sauce gently covers meatballs in this easy crockpot meal! These meatball subs make an excellent quick weeknight meal or fun game-day grub!
Last week, I went to the grocery store every single day leading up all the way to Christmas day. It was ridiculous. I don’t know how I managed to forget items or change so many plans, but I did. There was so much to coordinate between bringing appetizers to parties, making cookies for the kids or preparing sides for our holiday meal. After all those trips and all that cooking and baking, I realized I completely forgot about what we are going to eat now that Christmas is over. In short, I forgot what it’s like to need a “normal” meal.
The best way to combat the “what’s for dinner” syndrome is to keep a few key frozen items on hand. Meatballs are one of the best things to have in your freezer. Meatballs and spaghetti, as well as this meatball skillet meal, make regular appearances at our dinner table. These Buffalo Ranch Meatball Subs will be added to the rotation!
I start with Farm Rich Meatballs ( I used the Original variety, but Turkey Meatballs would work well too) that I place in a crockpot. I added my favorite Buffalo sauce and some ranch seasoning and let them cook up together, per package directions. To assemble my sub sandwiches, I drizzle a little-bottled ranch dressing on the inside of each sandwich roll, add shredded lettuce, Meatballs and a sprinkling of blue cheese. Then to keep with the Buffalo theme, I sprinkle each roll with a little celery salt! These sub sandwiches are so easy and so incredibly good! They are perfect when you need a simple family meal, but they would be ideal for game-day or party time!

- 1 package Farm Rich Original Meatballs
- 1 12 oz bottle Buffalo wing sauce
- 1 tablespoon ranch seasoning
- 1/2 cup ranch dressing
- 2 cups shredded iceberg lettuce
- 4 oz crumbled blue cheese
- 8 -10 sub rolls
- 1 teaspoon celery salt
- In a crockpot combine, Meatballs, sauce, and seasoning; stir to coat. Cook according to package directions. To assemble, drizzle a tablespoon of ranch dressing on the inside of each sub roll. Place 1/4 cup of lettuce over the dressing, followed by the Meatballs. Top each sandwich with crumbled blue cheese and a sprinkling of celery salt.
