I do love a mimosa drink and I would love to have one or two on Mother’s Day, but I’m guessing that won’t happen.
If this was an ordinary Mother’s Day then I would be with my sisters and my own mother enjoying brunch with a large bottle of Prosecco and orange juice to go with it.
But I won’t be able to see my whole family this year. And I cannot have a mimosa on my own. I mean, I would open the Prosecco, enjoy one glass, and then what do I do with the rest of the Prosecco? I’d have to drink it right? But then I’d be asleep by noon and the day when would be over.
What Is A Mimosa Drink?
A classic mimosa recipe is made of up of champagne and citrus and is popular at bridal showers, brunch, weddings…. and perhaps an ordinary Saturday night.
But…there is no hard and fast rule that says you HAVE to use orange juice! I mean, why not use mango juice?
How Do You Make This Mango Mimosa Drink?
I start this cocktail with a can mango nectar. You can find this in either the juice aisle of your grocery store or sometimes it can be found in the ethnic food section of the grocery store.
I also use frozen mango chunks. I like to keep them frozen or semi-frozen to add a nice chill to the mimosa.
Combine the nectar and the mango chunks in a blender and combine until smooth.
Divide the juice mixture between your glasses and top each glass with chilled sparkling wine, champagne or Prosecco!
Recipe Tips
- Make sure you puree your fruit until it is smooth, otherwise you may find your drink has small fruit pieces floating, which isn’t bad, it really comes down to aesthetics.
- You can also swap out a mango juice blend for either the nectar or the actual fruit pieces.
- This mimosa drink is best when consumed immediately.
- I personally prefer Prosecco, I find that champagne can be too dry for my taste, but this is completely a personal preference.
- Sparkling cider, sparkling water, or lemon-lime soda can be used for a non-alcoholic version.
What Goes With A Mimosa Drink?

- 1 11 oz can mango nectar
- 1 cup frozen mango chunks
- Prosecco or champagne
Instructions
- In a blender combine the mango nectar and the frozen fruit chunks.
- Puree until smooth.
- Divide the fruit between glasses and top with Prosecco
- Serve immediately

These are a great easy twist on the classic. I had to use a tropical fruit mix because the stores have been cleaned out – super tasty. I found mango nectar in the ethnic section. Yum.
