White Chocolate Chip Lemon Muffins with Macadamia Nut Streusel

I love trying new recipes with lemons!  They are tart, fresh and packed with intense citrus flavor!
These homemade muffins are not only wonderful for any spring menu, but they are the perfect breakfast treat any day of the week!

This post is a housewarming for our friend Ashton from Something Swanky .  She and her family just moved into a new home and naturally we’re helping her settle in with food!  And lots of it!  Since I love all things lemon, especially sweets like cookies and monkey bread, I figured I’d show up with lemon muffins!  She’ll be needing a good breakfast for all the unpacking!

We moved into our current home six months ago.  I’m still recovering.  It was sort of a nightmare.    I won’t go into detail, but basically we moved into our home on a Friday night but all our belongings (except for some shirts and our TV) stayed on the moving truck until the following Monday.  That means for an entire weekend we had no underwear (this required an emergency trip to Target), no extra clothes, no beds, towels, shoes, etc.  There was a lot of crying that weekend.  When I did get my belongings, specifically my kitchen stuff, the first thing I did was to make donuts.  Do you blame me?  I needed comfort food!   My husband and I vowed that the next time we move, it will be to the old folks home.

Our saving grace during that short period of sparse living, was how my sister swooped in like the Calvary to lift us up from our new dwelling despair!  She came in armed with an air mattress, table and chairs, towels, donuts, fruit bagels and juice.  By the way we dug into that bounty, you  would have thought we had been living in the wilderness for weeks!  Once we had full, happy belly’s, our situation didn’t really seem that bad.  It just felt like an adventure.  We figured someday we’d look back and laugh at the whole weekend.  I’m here to report, that after six months, that day hasn’t come!  Perhaps in another six months we will finally be able to give a chuckle.

But, thankfully Ashton and her family have had a successful move.  I wish them years of happiness in their new home!  May they fill it everlasting loving memories!

White Chocolate Chip Lemon Muffins with Macadamia Nut Struesel

Ingredients

    For the Muffins
  • 1 cup butter, melted, slightly cooled
  • 6 oz plain Greek yogurt, such as Chobani
  • 4 eggs lightly beaten
  • Juice and zest from two lemons
  • 2 ½ cups flour
  • 1 ¾ cup sugar
  • ½ teaspoon baking soda
  • ½ salt
  • 1 cup white chocolate chips
  • For the stuesel
  • 1 tablespoon butter melted
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup chopped macadamia nuts
  • For the glaze
  • ¾ cup powdered sugar
  • 4 Tablespoons lemon juice

Instructions

  1. Preheat oven to 350. Line two muffin tins with liners, set aside.
  2. In a large bowl, whisk together melted butter and Greek yogurt. Add in beaten eggs, lemon zest and lemon juice. Carefully stir in flour, sugar, baking soda and salt. Batter will be thick. Stir in chocolate chips. Using a cookie scoop, fill muffin tins with a generous scoop of batter.
  3. In a small bowl, combine brown sugar, cinnamon, chopped nuts and melted butter. Sprinkle streusel over muffins. You may want to double the streusel! Bake for 18-20 minutes. Let cool in pan for 2-3 minutes before removing to a wire rack to cool.
  4. Once the muffins have cooled, prepare glaze. Combine powdered sugar and lemon juice. Adjust according to your taste and desired consistency. Drizzle glaze over cooled muffins.
  5. Makes 24 muffins.

  10. The fear of moving again is what will keep me here “for the duration.” I just don’t wish to go through that ever again! These muffins, though, are really something, Tanya. A streusel-topped muffin is a thing of beauty, in my book. That you made it with macadamia nuts is a fantastic idea. These muffins may not make a move any easier but they sure would make that first evening & following morning in the new home a whole lot better.
