Our Covid summer was a little uneventful (like everyone else’s I’m sure), but we did manage to sneak away for a little trip to Hilton Head, SC.
These butter cookies I am sharing with you today are my version of the Byrd cookies that we ate all week long! Byrd Cookies are famous for their lime coolers but the Funfetti cookies were our favorite!
What Are Butter Cookies?
Butter cookies are unleavened cookies that have a crisp texture because of the quantity of butter and sugar. These cookies are pretty straightforward with one exception; the Funfetti cake mix.
How To Make Butter Funfetti Butter Cookies?
STEP ONE – In the bowl of a mixer, beat softened butter until creamy. Beat in powdered sugar until combined.
STEP TWO – Beat in one egg into the batter until it is fully incorporated. Add the vanilla extract.
STEP THREE – In a small bowl, whisk together the cake mix, flour, and salt. Slowly add the flour mixture with the butter; fold in sprinkles.
STEP FOUR – Drop cookies by spoonfuls on prepared baking sheets. Refrigerate the baking sheets for about an hour. Chilling the cookies prior to baking will keep the cookies from spreading too much.
STEP FIVE – Bake the cookies in a 350-degree oven for 10-12 minutes or until set and the edges are lightly crisp. Remove the cookies and allow them to cool on the baking sheets for 2-3 minutes before removing them to a wire rack to cool completely.
Can Butter Cookie Recipe Be Frozen?
Baked cookies will keep in the freezer for up to 3 months.
After baking, allow cookies to cool completely. Place them in a single layer on a parchment-lined baking sheet and place them into the freezer to set.
Place the cookies in a freezer-safe zip-top storage bags or a freezer-safe container.
Recipe Tips
Most cookie recipes require you to use softened butter. But if your butter is too soft, your cookies will spread quite a bit. Your butter is ready when you can make a slight indentation with your thumb.
Make sure you do not over mix the dough. This will make your cookie extra crispy. This is fine if you like your cookies crispy, but what we are going for in this recipe is chewy in the middle and crispy on the edges.
Allowing the cookies to rest in the fridge will allow the flour to fully hydrate, which (in addition to chilling the butter) helps to make your cookies firmer.
You can play around with the flavoring, you can add butter flavored extract or even almond extract. If you want to get really fancy, dip cookies halves into melted white chocolate!
Feel free to add more or less sprinkles to your cookies (can you have too many sprinkles anyway?
