This coconut caramel iced coffee will keep you going!
When my kids were babies, coffee was the most essential part of my day. I could skip a shower, eat cereal for dinner, have baby food stains on my shirt, but I could NOT live without my morning POT of coffee. I couldn’t bring myself to speak or even look at another human being (except my baby) until I had my morning kickstart. Coffee kept me going, it kept me sane and it kept me happy. Here it is 13 years later and coffee is still a huge part of my morning routine. The only that has changed is everything else about my morning routine.
I still wake up early with kids, but now my mornings are concentrated on getting someone somewhere, whether that means getting them onto the bus during the school year or to a practice or the pool during the summer. I always have one cup of coffee before I start shuffling kids around, but after they are where they need to be and after I have exercised I take time to sit and savor another cup of coffee. Coffee is no longer a jolt to get my system going, it is an experience.
During the approaching summer months I often turn to iced coffee. Since I rarely have time to visit coffee shops, I love to find ways to enjoy my favorite coffee drinks at home. This iced macchiato combines my favorite flavors, coconut and caramel. It starts with a simple syrup flavored with coconut in the bottom of my glass followed by a gentle swirl of caramel syrup. I added ice and coconut almond milk followed by Tim Hortons Original Blend coffee (which is the real star of this drink). The coffee pods make it so easy to enjoy this smooth, rich tasting coffee in my own kitchen. Each pod ensures I’ll get quality coffee with each sip! A dollop of whipped cream, a drizzle of caramel, and a sprinkling of toasted coconut make this look and feel just like a coffee shop treat! All I need is a chocolate chip scone or raspberry glazed key lime cake on the side.

- 1/3 cup of water
- 1/3 cup of sugar
- 1 teaspoon coconut extract
- caramel syrup
- 1 cup coconut almond milk
- 12 oz Tim Hortons Original Blend Coffee, brewed and cooled (I used a coffee pod, but ground coffee is also available)
- whipped cream, caramel sauce and toasted coconut for garnish.
To prepare syrup, combine water, sugar and extract in a small saucepan over medium-high heat. Bring mixture to a boil, then reduce heat and allow mixture to simmer for 10-15 minutes or until it has reduced and become thick and syrupy. Divide syrup between two tall glasses.
Drizzle caramel sauce around the insides of each glass and fill each with ice.
Pour a half a cup of the coconut milk into each of the two glasses along with the cooled coffee. Garnish with whipped cream, caramel sauce and toasted coconut.
