I am hoping this sheet pan sausage dinner is just thing to get more sweet potatoes into my family’s diet. When my babies first tried eating jars of baby food sweet potatoes, I was thrilled! I thought to myself, “hey I got this whole parenting thing.” I was certain my kids were going to grow up loving sweet potatoes and any other veggie I threw at them. I was so naive. I was naive in thinking that parenting was just about feeding your kids the right things and foolish for thinking the kids would eat any and all veggies.

My kids are good eaters. They do eat Ramen Broccoli and Kale Salad, Sauteed Brussels Sprouts, and most other vegetables with the exception of asparagus and sweet potatoes. I want them to like sweet potatoes because they are so good for you and they taste delicious. I’ve learned that in order for the kids to eat sweet potatoes, I have to get pretty crafty with my recipes. This sheet pan sausage dinner is one of those crafty recipes.

Kids love apples, and for the most part, they like sausage too. I figured if I paired sweet potatoes, kid-friendly apples and cheese filled chicken sausage then the kids would never be able to resist! To clinch the deal, I served this sheet pan sausage dinner with a simple apricot glaze that can be served over the sausage and the vegetables.

I feel like I nailed it with this meal. The kids did indeed love the sausages, the glaze, and they were pretty darn quick to devour the apples AND the sweet potatoes (high fives to me!). The glaze is optional. The recipe is rather simple and straightforward, the ingredients will get baked in batches, and none of the batches take long. This is a great meal for busy nights as the method is quick and super simple, and the ingredient list is rather short. Any potato would work in this recipe and feel free to add veggies that your family likes to eat!

    Being a light chicken sausage, sounds like this would double for a good breakfast/ brunch option, just add a fried egg to the top!
