Want a dessert that is simple, fun and oh so patriotic? How about a red, white, and blue ice cream cake!

This dessert is so easy but will make an impressive statement for sure!

This Red, White, and Blue Ice Cream Cake is the best way to kick off the summer! This cake is so easy, yet looks so impressive!

There are many ways in which the summers from my youth differs vastly from the summer my kid’s experience. I was never over scheduled for starters. In fact, I was downright bored a month into summer break and that boredom stayed with me until the end of the break. Secondly, the electronics. Meaning I had none and my kids have too many. If I wanted to find a friend to play with I ran to their house,  or called them using my telephone which was ATTACHED TO A WALL  There was no texting, no snapping, no messaging. And finally, one of the most memorable differences between my childhood and my kids was the climactic daily appearance of the ice cream truck.

I and a dozen other kids could be in a heated game of hide and seek, but if we heard the ice cream truck’s tin sounding jingle, we’d stop and immediately run to our houses to find some money. If we were lucky enough to procure some coins from our parents we would stand for what seemed like hours curbside on our street. When the ice cream truck finally appeared it became a cut-throat race to the front of the line.

I always ordered a Bomb Pop. I loved the red, white, blue, the shape and the taste of that popsicle. I licked that popsicle as slowly as I could so the whole thing could be savored. By then end my figures would be sticky from that sweet, icy nectar dripping down my hand, but I didn’t care one bit. I was happy.

This Red, White and Blue Ice Cream Cake is a little tribute to my ice cream truck days. It is so simple, it is hardly a recipe. It’s more of an idea really. Three kinds of ice cream(blueberry for the blue ice cream, vanilla, and strawberry) are layered on top of a vanilla Oreo crust. Jam and ice cream topping fill in and whipped topping crowns the top! This red, white and blue ice cream cake is impressive and delivers a unique and delicious way to enjoy ice cream!

Red, White, and Blue Ice Cream Cake ;Description A simple and yet ice cream cake with a patriotic theme!

This Red, White, and Blue Ice Cream Cake is the best way to kick off the summer! This cake is so easy, yet looks so impressive!
Prep Time 1 hour 10 minutes

Ingredients

  • 20 vanilla Oreos
  • 4 tablespoons melted butter
  • 1 gallon softened blueberry ice cream, softened (I used Private Selection’s Blueberry Cheesecake)
  • 1/2 cup blueberry jam
  • 1 gallon vanilla ice cream, softened (Kroger Brand)
  • 1 gallon strawberry ice cream, softened (Kroger Brand)
  • 1/2 cup strawberry ice cream topping
  • 8 oz frozen whipped topping (Kroger brand)
  • Fresh fruit

Instructions

Pulse Oreos in a food processor until they become fine crumbs. Toss the crumbs with melted butter and press into the bottom of a spring form pan. Freeze for 10 minutes.

Scoop blueberry ice cream and place it over the crumbs. Smooth the ice cream out with an offset spatula. Spread the blueberry jam over the ice cream. Freeze this for 20 minutes.

Place vanilla ice cream over frozen blueberry layer and spread. Once again, place the cake in the freezer for 20 minutes to set.

Top the vanilla layer with strawberry ice cream and spread. Spread the strawberry ice cream topping over the ice cream and top the cake with whipped topping. Freeze the cake until you are ready to serve. Garnish with fresh fruit just before serving.

Notes

Kroger brand products worked well in this recipe.

Substitute flavors or fillings as needed. I found the easiest way to remove the cake was to run a large knife under hot water and work the warm knife between the ice cream and the side of the pan until I was able to lift the sides of the pan away and place the cake onto a serving plate

    Great idea. I’ll make a red & white cake for Canada Day July 1st. Probably use strawberry ice cream mixes with strawberry jam. Freeze then use vanilla & then the cool whip topping. strawberries are wonderful this time of year so top it with beautiful red strawberries & voila a beautiful Canada Day cake. Thanks. Feel free to publish my Canada cake recipe as a take off of your patriotic cake.
