Chicken With Buffalo Fettucine Alfredo #backtoschoolweek

Chicken tenders are lightly pan-fried and served with fettucine in a light alfredo sauce

that has been infused with buffalo sauce!  This fast and simple pasta dish

brings dinner to the table in under 30 minutes!

In just a few short days my kids will be standing outside with fresh faces and crisp backpacks waiting for the rumbling sounds of the big, yellow, tin-can of a school bus coming to whisk them away to a brand new school year.  Ah the school bus, there’s nothing quite like it is there?  Inside there are dozens of kids bouncing around trying to talk above the din of the giant engine and over-sized wheels.  I know some kids love the bus.  They see it as an opportunity to catch up with their friends, it is their time to be social.  Some kids sit quietly in a tired daze, just waiting for the moment they can hop off the bus.  And then there are some kids who see the bus as their chance to let loose and go totally wild.

What is it about the bus that creates a free for all feeling for some kids?  Is it because the one adult on the bus (the driver) is sitting so far up front and is too busy driving to notice all that is happening behind her?  Is it the fact that no one is strapped into those dismally colored vinyl seats?   Is it the mix of ages that lends to total chaos and disarray?

I only rode the school bus for a few years.  Since I could walk to my elementary school, I didn’t need a bus until I was in the 7th grade.  My bus driver was known as JimBob.  I’m not sure if he was given that name by the students or if that was his actual name.  We only had him for half a year.  I believe, like me, he was scared to death of that drive!  I vividly remember sitting in the safest spot-up front because the kids in the back were a force to be reckoned with!  They would whip pennies at the kids in the front, which is why I sat in a hunched position at all times.  Some kids thought it was hilarious to spit out the window knowing their spit would catch the person in back of them in the face.  Insults and jabs flew as quickly as those pennies.  I remember on the first frosty day, my best friend wore her new Cabbage Patch ear muffs, but quickly took them off and hid them once the big kids in the back caught a glimpse of those.  She never wore them again.  By the middle of the year, we had a new bus driver.  She was a bit more feisty than JimBob.  Frequently, we’d arrive at our bus stop late because she had to pull over until the entire bus was still and quiet.    That could take quiet some time.  I took to packing snacks just in case it was a long day.  The bus ride during 7th grade was a true nightmare.  I am happy to report that by 8th grade all was well.  I was one of those kids who enjoyed the bus ride as I got to sit with my friends from my neighborhood who I didn’t get to see during the school day.  The kids were calmer, pennies and spit were never seen.

Thankfully my kids have not experienced that kind of raucous behavior on their school bus.  It is loud, and bumpy and there are one or two kids who use unsavory language.   But that is it.  Whew!  I suppose in a way, I see riding the bus as a rite of passage.  If you can survive the bus, you can survive anything!

I think we are all dreading the sound of the Big Yellow.   It’s not just because of the kids on the bus.  It’s because it’s symbolic of how our lives are going to change very quickly.  We will have homework and assemblies.  Orchestra practice early in the morning and sports right after school.   Our lives will be insanely busy before we know it.  That is why I’m stocking up on my quick dinner ideas.  We’ll be needing them!  Pasta is a staple in our house, but we get tired of eating it with tomato sauce.  Since I am the world’s biggest Buffalo sauce fan, I combined Buffalo sauce with a light alfredo sauce.  Because the sauce was creamy, the kick from the Buffalo sauce was toned down, making this family friendly.  I served chicken tenders on the side, because I knew they’d cook up quickly!  This is the perfect meal to serve to your family when you need something quick, but you don’t want to sacrifice flavor!  Chicken With Buffalo Alfredo Fettucine

Chicken With Buffalo Fettucine Alfredo #backtoschoolweek

Ingredients

  • 1 lb fettucina pasta
  • 2 tablespoon olive oil
  • 1lb chicken tenders
  • 1 egg, lightly beaten
  • 2 tablespoons milk
  • 1 ½ cup Italian style bread crumbs
  • 2 T butter
  • 1 cup half and half
  • 3 oz Mascarpone cheese
  • ½ cup buffalo wing sauce
  • ½ cup parmesan cheese
  • salt, pepper

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, combine egg and milk in a bowl. Add breadcrumbs to a separate bowl. Heat oil in a skillet over medium heat. Dredge chicken in egg mixture, followed by bread crumbs. Cook in skillet until evenly browned, about 6-8 minute per side, depending on the thickness of your chicken. Set chicken aside and keep warm.
  3. Melt butter in the same skillet, slowly pour in half and half and stir in mascarpone cheese until it is fully incorporated. Whisk in Parmesan cheese and buffalo wing sauce. Let sauce cook for 1 minute to thicken.
  4. When pasta is ready, drain and combine with buffalo sauce. Serve with chicken tenders.
  5. Serves 6

  1. Oh my goodness, I would have been scared to death to ride that 7th grade bus! You know what doesn’t scare me? This dish! Chicken and the buffalo flavors are so great together, and we love pasta here. Going to need to make this soon!

  3. I have very torn memories about my long bus ride as a kid too. I met my best friends to this day on that bus. But there was a lot of turmoil, mean kids, all kinds of stuff too. This buffalo pasta looks so tasty. Love the idea!

  11. Living less than a block from my grammar school, I never got the chance to ride a school bus. Even if we had lived further away, there were no buses to ferry us. It would have meant a longer walk. Judging by your experiences, I’m kinda glad I missed out. Mixing Buffalo sauce with mascarpone and parmesan cheeses is a great idea to dress a dish of pasta.   12. First of all Buffalo Fettuccine is like the smartest thing ever. And second– I feel bad for bus drivers. I can’t even handle driving with my own 2 kids for more than a few minutes. The exception here is the elementary school bus drivers because the little kids here get in trouble for EVERYTHING on the bus. They are not allowed to talk. Or read. What is that all about? I have a little talker but he will be quiet if he has a book. So basically we are in trouble all the time.

  13. I am a seasoned bus rider, too! I actually rode it into high school…..but for the most part it was much calmer than your penny-flinging, spit-flying ride! My kids now have assigned seats on theirs….smart!! This is a great dinner idea! Love the buffalo alfredo….genius!
