Fresh pineapple can be especially sweet in the summertime! If you can find a ripe pineapple or have leftovers, use it to make pineapple fritters! Fruit studded fried dough is slightly sweet and delicious! Dip your fritters in a simple glaze and enjoy them for breakfast, dessert, or any time in between!
Fritters are some of my favorite foods to make. They are easy and can be made with almost anything! I have made corn fritters, zucchini fritters, conch fritters, peach fritters, pumpkin fritters, and strawberry fritters! I don’t think I could pick out a favorite, they are all so good!
What Is A Fritter?
A fritter is made with a simple batter that is scooped and dropped into hot oil then fried until golden brown. Fritters are bite-sized and, as shown above, fritters can be both sweet and savory.
Fritters are similar to donuts, but the biggest difference is donut dough is often sweeter, sometimes filled, and not dropped by spoonfuls (meaning they are often shaped) into the hot oil.
How To Make Pineapple Fritters
STEP ONE -Prepare the fritter batter by combining flour, sugar, baking powder, and salt in a bowl. In a separate bowl or measuring cup, whisk together milk, eggs, butter, and vanilla. slowly add the wet ingredients into the dry ingredients followed by chopped fresh pineapple.
STEP TWO – Place vegetable oil in a deep skillet or stockpot over medium heat. You want the oil to be about 3 inches deep. Heat the oil to 360 degrees.
STEP THREE – When the oil comes to temperature, drop small spoonfuls of batter into the hot oil. Cook until the fritters are golden brown, turning the fritters as the cook.
Remove fritters and place on a paper towel-lined baking sheet to drain. Repeat with the remaining batter.
What To Serve With Pineapple Fritters?
Fritters work nicely coated in cinnamon sugar or sugar and finely chopped toasted coconut! You can also dust them or coat them in powdered sugar. I chose to sprinkle the fritters with powdered sugar and serve a simple glaze for dipping on the side.
Chocolate sauce, caramel sauce, Nutella, melted peanut butter, or fruit sauce would all make excellent dipping sauce!
Why Are My Fritters Soggy or Greasy?
If you drop your batter into the oil before it has come to temperature your fritter will take a long time to turn golden brown. In that time it will have absorbed too much oil. this will cause your fritter to be greasy and a bit soggy.
I suggest investing in a thermometer to attach to your pot to ensure your oil comes to the correct temperature. However, my temperature testing hack is to insert the handle of a wooden spoon into the oil. If bubbles rapidly form around the handle, the oil is ready!
As you drop your dough, be sure to avoid overcrowding. This will lead to slower cook time and the oil temperature will decrease. Work slowly and only had a few at a time.
Make sure you allow the fritters to drain on a paper towel, they will naturally absorb a little grease.
Fritters can be made with any fruit! Experiment with apples, bananas, plums, or lemon! You can use fresh or canned (but well drained) pineapple.
I made a very simple glaze for my fritters and I flavored it with coconut extract. You could also flavor your glaze with pineapple juice, coconut milk (or coconut coffee creamer). rum or rum extract.
- 2 cup flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup buttermilk
- 2 eggs, lightly beaten
- 3 tablespoons butter, melted
- 1 teaspoon vanilla
- 2 cups peeled, diced pineapple
- 3 cups powdered sugar
- 1/2 cup milk
- 1 teaspoon coconut extract
- vegetable oil
- shredded coconut if desired
- Place oil in a deep skillet or a stockpot over medium heat (fill the pot with about 3 inches of oil). Heat the oil to about 360 degrees.
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the buttermilk, eggs, butter, and vanilla
- Stir wet ingredients into dry ingredients just until combined; fold in pineapple.
- Drop spoonfuls of batter into the hot oil, taking care to avoid overcrowding the pot.
- Fry the fritter for 1-2 minutes or until golden, flip and fry the second side.
- when fritters are golden brown, remove them to a paper towel-lined baking sheet to drain.
- Repeat until all the batter has been used.
- For the glaze, whisk together the sugar, milk, and extract.
- Dip each fritter into the glaze, coating completely. Allow the glaze to set
- Sprinkle with coconut if desired
