Homemade tortilla chips can come out of the air fryer looking golden but still feel softer than the crunchy chips served at restaurants. Putting them back for another few minutes seems like the obvious solution, but that extra heat can turn thin tortilla pieces brown before they develop the texture you’re after. The missing step happens outside the appliance.

A recipe from Nutrition in the Kitch cooks corn tortilla triangles for just four minutes at 370°F, then leaves them to cool for another five to ten minutes. During that rest, the chips lose residual heat and moisture, allowing their texture to become firmer and crisper.
The method starts with ordinary store-bought corn tortillas, a little oil, salt, and chili powder. No deep fryer or large quantity of cooking oil is required, but the cooling period matters as much as the short cooking time.
Four minutes in the air fryer starts the process
Cut ten six-inch corn tortillas into six triangles each, creating approximately 60 chips.
Toss the pieces with one tablespoon of olive or avocado oil, ¾ teaspoon salt, and ½ teaspoon chili powder until coated.
Preheat the air fryer to 370°F for three minutes, then arrange about 10–12 triangles in the basket with minimal overlap.
Cook for four minutes, stopping halfway through to flip and rearrange the chips. Air circulation can move the lightweight pieces around, causing some to overlap during cooking.
Working in small batches gives the hot air room to reach more of the tortilla surfaces, helping the chips cook at a similar rate.
The crunch develops as the chips cool
Transfer the cooked triangles to a paper towel-lined plate and leave them for five to ten minutes.
The chips may feel somewhat flexible when they first leave the basket, but their structure firms as they cool and remaining surface moisture dissipates.
That means judging their texture straight from the air fryer can lead to unnecessary cooking.
The recipe recommends allowing the chips to reach their full crispness before deciding whether they need more heat.
For warm restaurant-style chips, the cooled pieces can return to the air fryer for approximately one minute at 350°F. At this stage, overlapping is less of a concern because the chips have already been cooked.
Corn tortillas make the difference
White corn tortillas are the preferred choice in the original recipe because their flavor is mild and resembles restaurant-style tortilla chips.
Flour tortillas can also be used, although their texture may differ.
The seasoning can change without altering the basic method. Lime zest and extra chili powder create a citrus variation, while cinnamon and sugar turn the triangles into a sweet snack.
Serve the finished chips with salsa, guacamole, hummus, or queso.
The recipe makes approximately three to five servings, depending on portion size.
Four minutes of hot air gives the tortillas their cooked surface, but the extra five to ten minutes outside the basket helps complete the texture. Waiting before taking the first bite may be the difference between a flexible tortilla triangle and a crisp chip.
