Tofu can spend 15 minutes in an air fryer and still come out softer than expected. More heat isn’t always the answer. Crisp tofu starts before the basket gets hot, while the block is still sitting on the counter. Extra moisture works against the crust, so this recipe presses extra firm tofu for 30 minutes before cutting, marinating, or cooking it.

Skip that first step and the air fryer has to deal with water trapped inside the tofu before it can work on the exterior.
Press the tofu for 30 minutes
Start with one block of extra firm tofu.
Wrap it in paper towels or a clean tea towel, then place weight on top. A tofu press works, but you don’t need one. A stack of books, heavy baking dish, or cast iron pan can provide the pressure.
Leave it for 30 minutes.
Pressing removes excess liquid before the tofu reaches the air fryer. The recipe identifies that moisture as one reason tofu struggles to develop a crisp exterior.

Extra firm tofu matters too
Don’t grab any block labeled tofu and expect the same result.
This recipe calls for extra firm tofu because it contains less moisture and holds its structure during air frying.
Once pressed, cut the block into cubes.
Now the tofu is ready for flavor.
Give the cubes another 30 minutes
Whisk together rice vinegar, honey or maple syrup, oil, soy sauce, fresh garlic, and lime juice.
Pour the mixture over the tofu and toss until each cube is coated. Let it sit for at least 30 minutes. The recipe says the tofu can remain in the marinade for up to one day.
Save the marinade left in the dish. It can go over the tofu after cooking or serve as a dipping sauce.
Now turn on the air fryer
Preheat the air fryer at 370°F for 3 minutes.
Transfer the marinated tofu cubes into the basket, then increase the temperature to 380°F.
Cook for 12 minutes.
Halfway through, pull out the basket and toss or flip the cubes. That exposes more of the tofu to the circulating hot air.
Twelve minutes isn’t a fixed finish line
Texture determines when the tofu comes out.
The recipe gives a broader range of 10 to 18 minutes at 380°F. Around 10 minutes produces a golden exterior with a softer center, while longer cooking creates a firmer, crisper result.
Air fryers differ too, so start checking after the 10 minute mark rather than adding time without looking at the tofu.
Add the saved marinade after cooking
Transfer the hot tofu into a bowl once the outside reaches the texture you want.
Drizzle with the reserved marinade or keep it on the side for dipping. The sweet, salty, tangy mixture also lets the tofu move between meals, from salads and bowls to wraps and stir fries.
The air fryer handles the final 12 minutes, but the step that sets up the texture happens half an hour before you switch it on. Press the water from extra firm tofu first. More cooking time can’t undo excess moisture as well as removing it before cooking starts.
