A fork slides into your baked Russet without resistance, so it seems ready for butter, cheese, and sour cream. There is one more step worth trying before it reaches the plate. Cut the hot potato open, put it back in the air fryer, and give it another 5 to 10 minutes. Opening the potato gives moisture inside another route out, helping the flesh become even fluffier.

The potato is already cooked at this point. Those extra minutes are about changing its texture.
Start with Russet potatoes
Russets work well for baked potatoes because their flesh can develop the light, fluffy texture associated with a classic baked potato.
Larger Russets also give you plenty of soft interior for toppings.
Wash off any dirt under running water, then dry the potatoes with a towel.
Poke a few holes before cooking
Use a fork or knife to pierce the skin in several places.
The holes give steam a route out while the potatoes cook.
Place the potatoes in the air fryer with space between them rather than packing them against each other.
Set the air fryer to 400°F.
Cook until a fork slides in
Air fry the whole potatoes for 45 minutes to 1 hour.
Size will affect how long they need, so use texture rather than the clock alone to decide when they’re cooked.
Push a fork into the potato. If it enters without much resistance, the center is tender.
Normally, that’s where baked potato instructions end.
Cut the potato open before serving it
Instead of adding toppings right away, use a knife to open the cooked potato.
Splitting the skin exposes the steaming interior.
Now put the opened potato back into the air fryer.
Give it another 5 to 10 minutes
Air fry the opened potato for another 5 to 10 minutes.
The goal isn’t to cook a raw center. It’s to let more moisture escape from flesh that is already tender.
That can leave the inside drier and fluffier before you add anything wet or rich on top.
Start checking at five minutes and stop when the texture looks right to you.
Add the toppings after the second trip
Now bring in the sour cream, shredded cheese, chives, butter, salt, or whatever else you want on a baked potato.
Opening the potato before those final minutes also means steam has already escaped rather than getting trapped beneath the toppings.
The same Russet that felt finished when the fork went through it gets one last chance to change texture.
A tender baked potato is cooked. That doesn’t mean it has reached its fluffiest point. Cut it open, return it to the air fryer, and give it another 5 to 10 minutes before dinner starts.
