Spicy and saucy, that's how I would describe this shrimp diablo!

This one pot wonder comes together quickly and it is made with simple ingredients.  Make it extra spicy if you can handle the heat!

My husband and I lived together just after he proposed.  When we joined forces, we realized very quickly that our kitchen collection was nothing short of paltry.  Like some couples, we entertained the romantic idea of running away to elope, but the truth of the matter was we needed a wedding because we needed gifts.  I should clarify that we did have a ceremony for all the right reasons, but we really did need the gifts.

This spicy shrimp diablo is going to heat things up! This is one easy recipe you wiil love!

The wedding allowed us to rid ourselves of the hodgepodge of hand me down kitchen cookware, dishes and glassware.  Our new collection has grown and changed since our wedding 16 years ago.  I recently added this set of Rachael Ray Marine Blue Cookware to my kitchen collection.  I love the vibrant blue color of this set and all the handy accessories that match.  The stock pot in this set was perfect for making this easy shrimp diablo recipe!

This shrimp diablo recipe is saucy and spicy! Turn up the heat if you dare!

This shrimp diablo is a very simple recipe.  Canned tomatoes, veggie stock, pasta, and shrimp make up the bulk of the recipe.  Garlic and seasoning add flavor and chile paste and crushed red pepper bring on the heat!  Adjust the seasoning to your taste.  I used bucatini pasta in this recipe because I like the thickness of that pasta.  Linguini, Cavatappi or even angel hair would be fine.  The pasta cooks right in the tomato mixture which makes this recipe so easy and perfect for our everyday busy lives.  Add the shrimp just before the pasta is al dente! This one pot dish ranks right up there with this Tortellini Skillet Lasagna and this One Pot Alice Springs Pasta as one of my favorites!

I love to entertain and host events; it is a fun way to spend time with family and friends in a relaxed and playful atmosphere. I'd be lying, however, if I didn't disclose that part of the reason I am eager to entertain is the FOOD!  Friends and family give me the opportunity to try out new recipes or revisit old favorites.

This baked goat cheese recipe makes entertaining simple! It is made with ingredients you probably already have!

I do try to consider the tastes of my guests, but to be honest, the food I make is all about me.  I tend to center my food around my preferences and tastes, which admittedly, may not be the most gracious thing to do.  This easy baked goat cheese dip is a perfect example. This dip is ALL about me.

Baked goat cheese is a simple appetizer that everyone will love! It hot and cheesy and so good!

Each layer of this goat cheese dip is a flavor I adore!  The base is Sabra's Roasted Garlic Hummus.  The hummus is creamy with a healthy dollop of roasted garlic right in the center.  The garlic covers the entire surface of the dish as you spread out the hummus, which is exactly what you want!  The next layer is pesto. Man,  I could eat pesto with a spoon!  Nothing beats a good basil pesto, it adds so much flavor to dishes, like this easy gnocchi recipe and these Caprese chicken portobello mushrooms.  Lastly, we get to the top layer which is goat cheese and cream cheese mixed together.

This baked goat cheese dip is so satisfying it's almost a meal! Three layers make this warm dip so delicious!

The dip bakes up hot and bubbly and just before serving, add some crisp freshness and a dose of color with halved cherry tomatoes and balsamic vinegar.  I also added chopped prosciutto because I had it handy, but it is optional.  This goat cheese dip is the kind of food that starts out as an appetizer, but turns into the unofficial meal!   Crudites and crackers make this unofficial meal satisfying and complete!

You are going to love this easy baked goat cheese dip! This appetizer is layered with flavor! Hummus, pesto and goat cheese compliment each other in each bite!

Yesterday I posted a Red, White, and Blue Ice Cream cake that was the perfect way to kick off the summer.  Today I am sharing the perfect way for mom's to kick off summer break!  This easy rum punch recipe is just what you need to get you in the mood for chilling and relaxing!

Rum punch is fruity and cool! You are going to love this simple punch recipe!

Every year I have an official summer drink.  Two years ago my summer drink was this Blueberry Vodka Lemonade, and last year it was this Mango Sangria.  Both are fabulous cocktails, but I'm really digging this year's rum punch recipe!  This punch has a sunny, sweet Carribean feel to it.  It was inspired by my recent Panama Canal Cruise on board The Coral Princess.

A rum punch recipe that is sure to be a hit at parties! Make an extra large pitcher!

I spent this trip with my 13-year-old daughter.  While I enjoyed a blue margarita, she enjoyed her share of virgin rum punch drinks!  They were incredible!  They fruity, smooth and just sweet enough.  I knew that we would have to recreate this drink at home!  So here it is, but this is rum punch recipe is for adults only.

Get the party started with this rum punch recipe! The Caribbean flavors will have you dreaming of the tropics!

The recipe is simple enough, combine two kinds of juices, two kinds of rum and a little grenadine for color.  Be sure to garnish with orange slices and cherries!  If you want to make this a non-alcoholic drink, leave out the rum and add lemon-lime soda in its place.  Both the color and the flavor of this cocktail scream summer.  If you need a little feel of the tropics without leaving your home, this is the drink for you!

There are many ways in which the summers from my youth differs vastly from the summer my kid's experience.  I was never over scheduled for starters.  In fact, I was downright bored a month into summer break and that boredom stayed with me until the end of the break.  Secondly, the electronics.  Meaning I had none and my kids have too many.  If I wanted to find a friend to play with I ran to their house,  or called them using my telephone which was ATTACHED TO A WALL  There was no texting, no snapping, no messaging.  And finally, one of the most memorable differences between my childhood and my kids was the climactic daily appearance of the ice cream truck.

I and a dozen other kids could be in a heated game of hide and seek, but if we heard the ice cream truck's tin sounding jingle, we'd stop and immediately run to our houses to find some money.  If we were lucky enough to procure some coins from our parents we would stand for what seemed like hours curbside on our street.  When the ice cream truck finally appeared it became a cut-throat race to the front of the line.

I always ordered a Bomb Pop.  I loved the red, white, blue, the shape and the taste of that popsicle.  I licked that popsicle as slowly as I could so the whole thing could be savored.  By then end my figures would be sticky from that sweet, icy nectar dripping down my hand, but I didn't care one bit.  I was happy.

This Red, White and Blue Ice Cream Cake is a little tribute to my ice cream truck days.  It is so simple, it is hardly a recipe.  It's more of an idea really.  Three kinds of ice cream(blueberry for the blue ice cream, vanilla, and strawberry) are layered on top of a vanilla Oreo crust.  Jam and ice cream topping fill in and whipped topping crowns the top!  This red, white and blue ice cream cake is impressive and delivers a unique and delicious way to enjoy ice cream!

I have vivid memories of sitting around the record player staring at all the album covers that my sisters owned.  My sisters owned so many records and we would sit in our gray, paneled basement and listen to them all for hours at a time.  Music has always played a big role in my life and my musical tastes were initially influenced by my sisters.

This rock and roll burger is a mouthwatering masterpiece! It's a little creamy, crunchy, spicy and totally meaty!

I was mesmerized by album covers.  They were works of art, something that is completely lost in these digital download days. There are certain album covers I will never forget. The Rolling Stones with their red lips, Queen with their monstrous robot,  or Pink Floyd with the cavernous moon picture or later, the Clash with their slicked hair and their tough attitudes.  Each of these albums and artists has made an impression on me and have shaped my appreciation for all sorts of music.

The perfect rock and roll burger, it has a little bit of everything!

This burger is my tribute to Rock and Roll.  It is wild and crazy mixed in with classic flavors!  The key to these burgers is Stubb's Legendary Bar-B-Que Sauce in the burger as well as on top! Stubbs BBQ sauce has a deep flavor with a little peppery spice.  Including the sauce in the burger makes them flavorful and moist.  A classic cheddar and bacon combo rests on top then crunchy, creamy and spicy slaw gets piled on to finish this monstrous burger off!  This burger has a little of everything, just like good old Rock and Roll music!  And for your sides, try these Bacon Wrapped Roasted Potatoes and this Salad with Black and Beans and Edamame!

Grilling Tips from Rocky Stubblefield:

  1. Season your meat. I like to use Stubb’s Beef Spice Bar-B-Que Rub and mix it in before I make the patties for a flavorful burger every time.
  2. Make a thumbprint in the middle of the patty before putting it on the grill. This will help the patty come our nice and flat (not puffy in the middle), and the meat will be cooked evenly throughout.
  3. Turn your meat as needed, so it gets an even flow of cooking. I always flip the meat – no matter whether I’m cooking steak, chicken, burgers, sausage or pork –several times. If the meat is sitting over flames without being regularly flipped, it can get burned and dried out on one side. I flip every few minutes depending on the heat of the grill, turning the meat more frequently when the grill is hot.
  4. Insider tip: Use an onion to clean your grill. Cut the onion in half, and while the grill is heating up, rub the onion across it. The juices from the onion clean the grill and get it ready for use.

This rock and roll burger is a patty you can sink your teeth into! Beef is topped with bacon, cheddar and a spicy slaw!

Each family get-together is filled with LOTS of food.  We are Greek, we like food.  Between my mom, my sisters and I there is typically enough food to feed a village.  And we are ok with that because we love the leftovers.   Mom typically brings the main course and her famous roasted potatoes, my oldest sister brings several sides and at least one appetizer.  I add several appetizers like this outrageously good hot corn dip or the "fried" pickle dip and my middle sister brings one salad.

This grilled veggie cobb salad cannot be beat when it comes to healthy flavors! Plus it is so easy!

While my middle sister may only be contributing a salad, I'll tell you, it's usually the best darn salad you've ever had!  The best until now that is.  This cobb salad is a doozy.  It really is a meal all on its own. This salad is full of greens and goodness.  I topped romaine lettuce with grilled squash, zucchini, and portobello mushrooms. Fresh cherry tomatoes add a pop of color along with the hard boiled eggs.  Tangy feta cheese is mixed in along with a very simple, herb vinaigrette.  Each ingredient in the salad plays a huge part in the outcome, but the vinaigrette steals the show.

Grilled Veggie Cobb Salad

The vinaigrette starts with Pompeian Organic Red Wine Vinegar that is mixed with a little stone-ground mustard and fresh herbs.  The red wine vinegar is crisp and fresh and made with organic grapes that were harvested at just the right moment. The vinegar is sulfite free,  Non-GMO verified and certified organic too.

This grilled veggie Cobb salad is almost a meal! It's loaded with good ingredients and lots of flavor!

The herbaceous vinaigrette makes the perfect coating for the freshly grilled vegetables and the soft cheese.  While this is a meatless salad, I did add some toasted tofu croutons for protein.  I  tossed my tofu with Pompeian Robust Olive Oil, garlic, salt, and pepper before roasting.  Feel free to omit the tofu, I know that is not for everyone.  Keep this salad vegetarian or add lean chicken instead!

These hamburgers are lightly seasoned and grilled to perfection.  A horseradish cheddar spread is placed on each burger and grilled until melted.  These burgers are anything but short on flavor!

These horseradish cheddar burgers and so thick and juicy and have just the right amount of topping!

I've partnered with the Ohio Beef Council to bring you this recipe.

I am willing to wager that whether you like horseradish or not, you will remember the first time you tried it.  Horseradish has such a distinct flavor, but what really sets it apart is the sinus clearing that takes place if you consume too much.  I always end up with too much and have to pinch my nose and scrunch my face.  But after the dust settles, I'm eager for more. Then I go do make things with horseradish, like this easy Horseradish Bacon Dip!

Horseradish cheddar burgers have a unique flavor but the juicy burger is irresistible!

This horseradish cheddar burger should not be feared if you happen to be one of those people who is not a fan of horseradish.  The horseradish topping is actually quite creamy with only subtle horseradish flavor.  The spread is made with cream cheese, shredded white cheddar and a touch of horseradish.  You can alter the amounts of any ingredient, although adding more cream cheese will completely change the texture and the taste.

These horseradish cheddar burgers are big on beef and big on flavor! A great way to kick of grilling season!

No matter what, don't skimp on the beef.  Beef is a healthy, high-quality protein choice. Beef provides essential nutrients and can help meet the recommended amount of daily protein needed.  Lean beef daily as part of a healthy diet can help lower cholesterol levels, and exercise is more effective when paired with a high-protein diet.

These juicy horseradish cheddar burgers are a must for your next BBQ! The creamy cheddar topping can practically be eaten with a spoon!

Tips for Grilling Success:

  1. Prep Your Grill. Starting hot is the key to success. Never start cooking your steak or burger before your grill hits 450 to 500 degrees. After cooking your steak for one to two minutes at that temperature, back the temp to medium high for the remainder of the cooking time.
  2. Know Your Grill. Know where hot spots are located. These are areas that tend to flare up and cook your burger unevenly.
  3. Diamonds are a grill's best friend! How do we make those beautiful steakhouse diamond marks? Make professional diamond grill marks by placing your beef on the grill with the ends at 10 and 4 o’clock. Once the meat has seared, turn them clockwise, with the ends at 2 and 8 o’clock.
  4. No poking! Always use tongs or spatula to move beef on the grill. Poking with a grill fork or knife only allows those tasty juices to escape.
  5. Add your cheese topping towards the end of the cook time and keep a close eye on it!
