Meal Plans Made Simple #28

Here we are, the end of another week.  I’m slowly starting to go back to school shopping.  The kids are pretending not to notice the jumbo size boxes of sanwich bags, juice boxes and cereals.  If they don’t see it, it’s not happening right? Oh yes it’s happening.  I look forward to our routine that the school year brings.  But I love having every one home too!  This time of year is bitter sweet. Let’s not worry … Continue reading →

Sweet and Spicy Grilled Ham, Pineapple and Cheese

Sweet and spicy ham and pineapple grilled cheese!

Pineapple takes center stage in this spicy grilled ham and cheese! I cannot pinpoint exactly when I decided to added a little sweetness to my savory dishes.  But I’ve certainly become obsessed with it.   In the past several months I've combined smoky pork with the sweetness of pineapple, plump blueberries with basil,  and tart cherries on pizza.  And I’m just getting warmed up!  I think by combining the sweet and the savory all in one dish, … Continue reading →

Caprese Italian Sausage

A Caprese salad is the perfect topping for grilled Italian sausage!

 Caprese salad makes the perfect topping for spicy Italian sausage! The first time I had a Caprese Salad I was on my honeymoon in Mexico of all places.  I remember it was actually part of our very first meal there.  Clearly it was memorable because that is the only thing I remember eating the entire week!  But that Caprese salad, ah that WAS good!  The soft, silky mozzarella, the fresh, thickly sliced tomatoes, the brilliant basil and … Continue reading →

Chicken with Blue Cheese and Grapes

 A simple chicken dish made with red grapes, tangy blue cheese, toasted walnut all in a sweet wine (mead) sauce!

 Chicken gets all dressed up!  This dish pairs chicken with sweet alchohol, grapes, walnuts and tangy blue cheese!     I tried mead only twice in my life.  The first time was in college.  My friend made it in his basement.  He was incredibly proud of his alcoholic honey creation, he truly thought it was the best thing ever.  I, on the other hand, was not impressed.  I’d rather drink rubbing alcohol than consume what he served!  Good … Continue reading →

Tortellini Skillet Lasagna

A simple skillet lasagna made with italian sausage, your favorite sauce and tortellini!

Need any easy and quick weeknight meal?  This tortellini skillet lasagna is for you! I love this time of year.  It’s the time for captain’s chairs, baseballs and gloves, and late nights at the ball park.  Yes, it’s the time for kid pitch baseball, and we love it!  I never tire of hearing the baseball thwack against a catcher’s glove, or the metallic sound of the ball making contact with the bat, or the clouds of dust that rise up when someone … Continue reading →

Orange Glazed Pork Chops {and a giveaway}

These pan seared pork chops are finished in the oven then covered in a simple orange glaze.

These pan seared pork chops are gently seasoned with rosemary and then covered with a subtly sweet orange glaze. I have a habit of getting rid of things very quickly.  I hate clutter and useless junk.  Everything really does have a place in my opinion.  If an item sits out for too long, then that signals to me, it is not needed and is therefore garbage.  Unfortunately this habit has come back to bite me on several … Continue reading →
