Mocha Brownie Peppermint Ice Cream Pie

A mocha brownie forms the crust for this easy peppermint ice cream pie!

Out of all the winter months, I like December the best.   It’s just the very beginning of winter and we haven’t had time to get sick of the gray sky that looms over Ohio all season long.    It’s just starting to get cold so I can hide my muffin top with warm, bulky sweaters or my numerous fleece tops.    I don’t have to worry about shaving my legs every single day because I live in my comfy jeans (I can’t be the only who celebrates this, right?).   I get to wear my UGG boots and my snuggly socks.  We just hunker down and hibernate.  I love it.  It’s our family time and it’s cozy.

And of course, December is  the month of Christmas and I am a huge kid when it comes to the holidays!  I’ve always loved Christmas.   There are so many holiday activities and traditions that our family enjoys.  I look forward to this time every year!  And I wouldn’t be a foodie if I didn’t admit that the best food seems to be had in December!  All the holiday cookies and desserts.  The fun drinks and meals.  December is just one, month-long buffet!

Peppermint Mocha Brownie Ice Cream Pie

One of my favorite flavors that really only surfaces this time of year is peppermint.  I can’t get enough of it.  Which is why my friend Julie from Julie’s Eats and Treats have devoted an entire week to it!  Cookies, brownies, cakes, cupcakes, pies…anything with peppermint, I want!

Peppermint Mocha Brownie Ice Cream Pie

It wouldn’t be December in my house if I didn’t make peppermint ice cream!  This is my go to recipe for ice cream!  It comes together quickly and is very creamy and rich.   This year I changed things up and made a pie.  I used a simple boxed brownie for the crust with espresso powder to lend it a nice mocha flavor.  You could certainly make your  favorite brownie instead.  White chocolate and hot fudge are layered in.  You could skip both and this would still be delicious!  Or add caramel and dark chocolate!  It’s a pretty versatile pie! The only thing I caution you about, is do NOT skip the cooking spray!  I used PAM Cooking Spray!  I personally trust PAM for non-stick results.   I’ve been the person who had a dessert flop because it stuck to the pan!  Has that happened to you?  It’s embarrassing, isn’t it?   I want my guests to taste this ice cream pie, not just look at it!    I know PAM will not leave a build up or a residue.  So when I serve up this ice cream pie, that is all we will taste!

Mocha Brownie Peppermint Ice Cream Pie
For the ice cream
  • 1 cup sugar
  • 1 4 oz carton egg product (such as Egg Beaters)
  • 1 teaspoon vanilla
  • 1 teaspoon peppermint extract
  • 2 cups heavy cream
  • 1 cup half and half
  • 25-30 Hard peppermint candies crushed
For the crust.
  • 1 15.5 oz box brownie mix (for an 8 x 8 sized pan, plus ingredients called for on the box)
  • ¾ teaspoon espresso powder
For the rest of the pie:
  • ½ cup white chocolate chips
  • 1 12.8 oz jar chocolate fudge sauce
  • 8 oz Whipped topping
  • Peppermint baking bits (optional)
  1. For the ice cream: In a blender, combine sugar, egg product, extracts, heavy cream and half and half until completely blended. Pour ingredients into your ice cream maker and process according to maker’s directions. Store in freezer until firm.
  2. Bake brownie in a pie plate according to package directions, adding espresso powder to the batter.
  3. Immediately press center of brownie down with a rubber spatula and carefully pus up the sides of the pie plate to make a crust. Top hot brownie with white chocolate chips. Let chips stand for 2 minutes. Spread melted chocolate in an even layer over crust. Place crust in the freezer for 30 minutes.
  4. Allow ice cream to come to room temperature. Remove crust from freezer and top with ice cream spreading the ice cream to cover the entire crust. Place pie back in the freezer for at least an hour.
  5. Remove pie and carefully cover ice cream with hot fudge topping. Return pie to freezer until ready to serve.
  6. Remove pie 10 minutes before serving. Top with prepared whipped topping and baking bits if desired. Serves 10

Winner Selection:

    Hi there, I was just wondering if you have ever made this the night before (then put the whipped cream./peppermints on immediately before serving). My concern is that the brownie would be hard as a rock if left in the freezer for more than an hour or so?

    • Yes, I would make each part separately and in advance and assemble a few hours before serving.
