Cheerios and Lattes is hosting the first party.  The first ingredient  is tomatoes.  Would you believe I struggled with this ingredient?  I’m so trained to think of desserts!  But there is a chef inside me who loves to cook savory food and is sort of good at it!  I went to one of my favorite foods-chili!  It is January and we could all use comfort food.   I didn’t really know what to expect using Coca Cola in my chili.   I figured the worst that could happen is I’d have to throw it out (wouldn’t be the first time!).  But you know what did happen?  The most delicious and aromatic bowl of chili!  I lightened it up a bit by using ground chicken and chicken sausage.  Fire roasted tomatoes added  such a rich, smoky flavor.  You can’t actually taste the Coca Cola,  It just provided a hint of sweetness.  My family really loved this chili!  I’m so glad I stepped out on a limb and tried chili with Coca Cola!  It was a surprisingly delicious addition!

Coca Cola Chili

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 6

Smoky sweet chicken chili made with fire roasted tomatoes and Coca Cola!

Ingredients

  • 1 tablespoon olive oil
  • ½ cup onions, diced
  • 2 cloves of garlic minced
  • 1 lb ground chicken
  • 1 1lb pork and chicken sausage (Johnsonville)
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • ½ teaspoon ground thyme
  • ½ teaspoon salt
  • 2 tablespoons chili powder
  • 2 tablespoons tomato paste
  • 1 14 oz can black beans, drained
  • 1 14 oz can fire roasted diced tomatoes
  • 1 ½ cups Coca Cola
  • 1 140z can chicken broth

Instructions

  1. In a large stockpot, cook onions and garlic in hot oil until soft. Add ground chicken and chicken sausage breaking up into small pieces. Continue cooking until chicken and sausage has browned. Add cumin, oregano, thyme chili powder and salt. Add tomato paste and stir until mixed in. Add canned tomatoes, cola, broth and beans. Bring to a boil. Reduce heat and simmer on low for 30 minutes.

    I have seen a few versions of pop in chili and was really curious how it tasted. Yours looks delicious and perfect for these chilly days we have been having here in the Midwest!!!

    I’ve used coke — with a little bourbon (hic) — to glaze a ham but never would have thought to add some to chili. Given the other spices you used, I bet this worked pretty well and, since your kids liked it, I’d say you came up with a winner, no matter which way the contest goes. :)

    Yes! I would probably brown the meat first, then dump everything else in. Let it sit on low.

    We finally got around to trying the chili today! Browned the meat first, then dumped everything else in the pot. If was SO good! Served with some crushed corn tortilla chips on top. We both ate two bowls. Yum! Thank you!
