Thank heavens for these Caprese burgers! I was able to make the patties up in advance and keep them in the fridge until I was ready to grill them, at 3:45 in the afternoon! Yes, we had to eat dinner by 4:00. No, we are not seniors (no offense), we are just crazy busy! This is so NOT what I dreamed our summers would be like back in April! Let me make a comparison chart of what I envisioned our summers would be like versus our reality.
The Dream Kids would be sleeping in until at least 8:00a.m.
The Reality Kids up at 7 :00 me up at 6:00 a.m to have an hour of silence.
The Dream Lounging in our pajama’s until mid morning.
The Reality Out the door by 8:45 am for camps, i.e. basketball, golf, art.
The Dream At the pool all day.
The Reality Too hot and tired to be at pool. Need to finish daily work that was interrupted by camp (see above).
The Dream Eat dinner leisurely, whenever we feel like it.
The Reality Shoveling dinner between 4:00pm and 4:45 pm.
The Dream Taking evening walks or bike rides, playing in the yard, catching fireflies.
The Reality Me taking my 3 year old daughter to swim lessons, after dropping off my oldest daughter at gymnastics. Meanwhile, texting my husband to find out how my son’s baseball tournament is going!
The Dream Putting the kids to bed at a reasonable time, my husband and I enjoying an adult beverage, having wonderful conversations.
The Reality Kids going to bed later than I’d like, no talking to husband because I have to catch up on my “pins” and he has to catch up on scores and highlights. No adult beverage because it’s an hour away from me falling asleep and I don’t want to have to pee several times during the night!
So back to the Caprese burgers. They were delicious! I love the Italian sausage, gives the Caprese burgers a peppery and savory bite while keeping them very juicy. The toppings were quick, easy and fresh. What’s easier than slicing tomatoes and mozzarella cheese? I would have loved these Caprese burgers a little more if we weren’t eating the last few bites on the run! Next April, I’ll dream about how busy we are going to be, then maybe our reality will be a lazy, firefly catching summer!
- 1lb mild Italian sausage
- 1lb ground sirloin
- 1 tsp oregeno
- 1 tsp basil
- ¼ tsp onion powder
- ¼ tsp garlic powder
- salt, pepper
- 6 slices fresh mozzarella,
- 6 slices tomato
- Combine all ingredients by hand, just until blended. Form into 6 patties, using your thumb, make an indentation in center of patty so that they don’t plump up during grilling.
- When grill is preheated, grill for 6 minutes per side, adding sliced mozzarella during last 3 minutes of grilling. Top with fresh tomato and basil.
