I am not a big fan of strawberry shortcake ( the dessert or the character-I always preferred Blueberry Muffin). I do like parts of the dessert, mainly the sweetened strawberries and the cream. It’s the biscuit that does me in. To me, biscuits are to be buttered and used to sop up something savory, like gravy.
I like the IDEA of strawberry shortcake, however. So I thought of a way to re-create the dessert that suits my own tastes. I love cake, and all things cake. I feel confident I have a winner here. I made it festive for the 4th of July by adding the blueberries. I like the contrast of the pink cake, the red strawberries, the white cream and the blueberries. I mean how much more patriotic can it get? I did not sweeten the berries for this strawberry shortcake, because between the cake layers and the sweetened cream, I feel it was sweet enough.
My family really enjoyed this dessert. The table was very quiet, except for the occasion “yum” and the lip smacking. I think you’ll be very pleased with this strawberry shortcake. It’s seasonal and festive.
Below, you’ll see my strawberry shortcake. I put a candle in it. I was practicing for my birthday. As the song goes, I was born on the 4th of July. I’m a lucky girl, I get fireworks on my birthday! I will be making some of these strawberry shortcakes for sure. I’ll probably be making something decadent and made with chocolate as well. But I’m predicting these little shortcakes will be the hit!

Tanya… Who on earth ever gave you a Strawberry Shortcake on a biscuit! I have NEVER ever heard of it being served this way. I have always eaten or served it on either cake (as you have here) or bundt or pound cake. I love your recipe too!! I can’t remember where I got that kind of shortcake, but let me just say I never had it again, until now! Honestly, I think it was 30 years ago! Pound cake or other cake makes sense! Have a great Independence Day!
This looks absolutely delish! I immediately copied down the recipe because it’s a great 4th of July recipe! You could totally make this low fat too with fat free Cool Whip, applesauce, etc. I’m gonna try it!
